Vegetarian cuisine is a huge part of Punjabi culture. This spice blend will give your vegetarian curries heaps of personality, and works particularly well with paneer (cheese).
Kitchen King Masala Spice Blend
You’ll Need: 200g paneer (Indian cottage cheese), potatoes and peas (as preferred), 2 onions. 2 chopped tomatoes, 3 teaspoons Kashmiri mirch powder, kasoori methi leaves (fenugreek).
Recipe for Veg Curry: Chop the paneer into cubes and fry in ghee or oil until golden. In a separate pan, sauté chopped onions until caramelised in ghee or oil, add the tomatoes and cook for a further 2 minutes. Then add salt and the Kashmiri mirch powder to taste. Add peeled and diced potatoes and peas into the onion mix and stir for 3 minutes. Transfer the fried paneer into the pan and simmer for a further 5 minutes. Sprinkle a handful of kasoori methi leaves on top, and serve.
